•M.O.L.E.® Thermal Profiler, may be referred to as the M.O.L.E..
•Thermocouple, may be referred to as T/C.
Software Terms:
•Workspace, The workspace in BakeWATCH® Kill Step Calculator may display content tailored to what you are doing. At software launch it displays the Start workspace. When creating a Kill Step report it displays the New Kill Step Report features and functions.
•Kill Step Variety Constants, a unique value for each baked good Variety via Bio-lab testing for the calculation of pathogen kill, due to differences in fats and sugars per recipe ingredients
•D-Reduction value, time required in minutes at a reference temperature to destroy 90% of an organism or its spores equivalent to one log reduction
•Z-value, The number of degrees in temperature required to change the D-reduction value of a specific organism or its spores by 90% (equivalent to a factor of 10)
•F-value, The process lethality or the time in minutes, at a specific temperature, required to destroy a certain number of viable cells
